Help me! i feel like i am hitting a wall with my cooking. making everything from scratch is really fun, but i am running out of simple recipe ideas. any ideas you all can offer would be greatly appreciated. things here which are cheap: rice, potatoes, most veggies, noodles, canned items. also i only have a few spices right now but am up for the adventure of buying more if inspired by a recipe. :) i didn't realize how much i used pre-made foods in the store for ideas (and how many quesadillas with chips and salsa i was really eating). also i have two big pots, and a few larger sauce pans - but nothing small. so anything that requires a small pan is more difficult. also i can only have 2 burners going at a time.

also i wanted to include a funny story. the other day tim went to our local old city grocer, minnear, to buy some pita. in an effort to avoid several trips to buy pita this week he decided he would get a large amount and put them in the freezer. when tim asked minnear for 20 pita minnear looked at him like he was crazy. he said, "20 pita for you and she, or are you having people camp at your house?" tim explained our mass pita stock idea. still he couldn't believe it. yesterday when we went in for some flour minnear asked us jokingly if we needed more pita. he then in great detail re-told the story of tim's 20 pita buying extravaganza with great excitement. i think he may forevermore think of us at the 20 pita couple and i wonder how many other people in the old city have heard the story of the silly americans who buy 20 pita for 2 people. goodness.

that's so funny. how often i buy things just to freeze. i never thought of a being in a country that thinks that's crazy.
Hey friend... I made some easy beef stroganoff last night that was pretty good.
1 lb. ground beef
1/2 onion
A few mushrooms, if you want
A bit of garlic, if you want
1 can of cream of mushroom soup
1/2 cup of milk
1/2 cup of sour cream
A little red wine, if you want
Salt and pepper
I'd sautee the mushrooms and onions, add the beef, get rid of the grease, add the milk and soup, bring to a simmer, add the wine and sour cream... serve it over rice or noodles. It's fast - 20 minutes maybe?
It's obviously not the healthiest, and I know that milk products might be a little harder to come by, but it was pretty tasty. We had it with steamed broccoli and grapes. I was kind of too lazy to make a salad. :)

This is a simple recipe and I think it's good:)
Peel tomatoes...here's how to do it. I didn't know how till a couple of years ago.
To peel a tomato, first use your paring knife to cut out the stem. Then slice a shallow X in the bottom (blossom) end.
Using a slotted spoon, plunge the tomato into boiling water for a few seconds.
Next, plunge it into a bowl of iced water. This will stop the tomato from cooking and further loosen the skin.
Remove the cooled tomato and peel away the skin. This same technique can be used for ripe peaches.
After you peel the tomato, put it in a bowl and get your best utensils ready...your fingers:) With your fingers start squeezing the tomatoes until there is some juice and a some hunks of tomato left. Season with your favorite spices...I use salt, pepper and sugar. Then serve over pasta. An easy quick meal.

We love making this if it works for you...cook white rice first and place in a greased 13 x 9, but do you have that?? If not, Keep the rice in the pan. Cut up a few chicken breasts and mix with cream of mushroom soup and pour over the rice, then sprinkle crackers over the cut up chicken/mush. soup mix, then melt a little butter and pour it over top. Bake for about 40 minutes at 375.
It's one of our favorites and really easy and fast!
